But the net carbs you get from just 75g seems so much for so little. Am I missing something?

Are you counting net or total carbs? I’m not sure about spaghetti squash but according to this https://www.ruled.me/best-low-carb-vegetables-ketogenic-diet/ eggplant is only 2.88gm NET carb per 100gm
Carb manager shows 2.3 net carbs on an eggplant at 40g
It shows 3.7 net carbs at 75g
Just seems like a high net carb for such a small amount of food.
Some discrepancies come up, are we talking raw or cooked? Big difference. For instance spaghetti squash is pretty borderline in my opinion as a low carb choice, 5.2g. for 100g which I am going to assume is cooked because nobody cuts up spaghetti squash into little chunks to be cooked individually, people just roast a whole or half squash.
Eggplant for 100g. raw is 2.8g and cooked 6.1g. Water being lost and sugars concentrated. I only use eggplant now and then since there are better choices generally. I don’t do winter squash at all.
