Soliciting random fatty pork cut ideas

This may well eventually belong in another category, but until then…

I’m looking for ideas with these pig cuts. Costco had a fuckton of this meat for cheap. All I saw was a bunch of fat. (And I love pork)

I’ve used it before, prior to keto and I would have baked it in chili sauce and brown sugar for a while. That’s not an option anymore.

Anyway, any ideas? They’re a little over an inch or inch and a half thick. Sous vide, baked, fried… all options on the table.

Do you have a pressure cooker? I would throw that in the InstantPot and then shred it.

I’ve been looking at them but haven’t pulled the trigger yet. The Instant Pot model I’d like is even out of stock on Amazon. 1-2 months wait… My freezer is at capacity!

Dang! Well, it is well worth it. I love that I can sautée or sear something and then close the lid and pressure cook it. So versatile. And meat comes out just amazing after a short amount of time.

I feel like just buying one and being surprised when it actually arrives.

Maybe a smoked paprika, garlic/onion powder, lite salt, cheyenne and some pepper rub in the meantime.

It’s amazing how fast your freezer fills when you specifically seek fatty pieces that “normal people” don’t want. (so they’re on sale)

So true. I like to browse the clearance or manager’s special section of the meat department, there is usually always something deeply discounted. Yesterday I found some fatty “breakfast” steaks for less than $2 each! Each one was pretty huge too, like four portions if I do steak and eggs.

I second the pulled pork idea in an instant pot, I’ve done that several times with pork from Costco. But given that you do not have one, this is another thing I do with pork chops including those fatty ones. I dusted them very heavily with paprika on both sides and a bit of salt-and-pepper. I then brown them on both sides and butter, and add a ton of sliced mushrooms. I continue to sauté until the pork is done and the mushrooms and their juices have reduced a fair bit. Then add a bunch of high fat sour cream, and heat it through, and you get a delicious rich mushroom sauce to enjoy with your pork.

My gag reflex totally conquers any notion of a mushroom. (no matter how supposedly delicious)

I guess - it’s a riff off of something my mother-in-law used to make, that we had stopped eating because it was too rich and fatty. But yeah, I guess it’s like a stroganoff.

I’ve saved this, but haven’t tried it yet. I’m contemplating a mix of ACV and lemon juice as a substitute for the pineapple juice.

What is the cut? Is that one big piece of pork? I am intrigued about what can be done with this and I will be looking for it at Costco.

It was several pieces cut into rows. I threw away the original packaging. :confused: it ended up as three “meal sized” portions of the pic.

Looks like boneless country style pork ribs. Which aren’t ribs but are actually part of the shoulder. We bake them with mayo and onions and BBQ sauce and they are stupid good. I’ll look for the recipe.

Get to know your butcher and ask him or her for recipes. You’d be amazed what an incredible source for cooking knowledge they have.
