Smoking a fattie! recipe

Here is my step by step instructions on smoking a fattie. Your smoker should be set up for two zone cooking. I smoke at 225F until an internal of 160F is reached. I will occasionally sear up the exterior if needed.

Tonight I have used my standard pork rub and KC style (both homemade) BBQ sauce. One has some sauteed mushrooms and cooked bacon inside. The other has garlic sauteed spinach and a lot of mushrooms.

Not EVERYTHING needs to be a chaffle. :laughing:

Fatties are great, and I haven’t made one in way too long. Thanks for reminding me of them, and I think I’ll combine the OP two stuffings and do a spinach, mushroom, and bacon filling.

My eldest daughter (we are both keto) and I have made several and found that the smoke was too strong with smoked bacon. So we opted for baking the fattie the last several we made.

But your personal preference for each of you may be different.

Fatties are a good way to get your :bacon: quota satisfied.
