I have a sneaking suspicion most of the “butchers” here (in a city of about a million people) don’t actually butcher whole animals, they certainly don’t slaughter them onsite. They probably get sides of beef etc. and ju

I have four butcher shops within 15 minutes of me and another two more within 30 minutes and then add to that there are at least 10 wild game processors within a 30 mile circle of me. Of the butchers I know, three of them slaughter on the premises as I take my livestock to them when it’s time to take them in.
I do love the country life.
