Most of the labels I see indicate 1 - 4g carb per table spoon.

Yeah, real balsamic can be carby but you don’t have to use much. We will sometimes buy some of the “good” stuff that comes in small bottles and use that for putting on vegetables (too expensive to use for salads, though). The good news is that it doesn’t take much.

I’ve seen as high as 7 or 8 grams/tablespoon.

If I’m out, I’ll use red wine vinegar if they have it, or just use a light spraying of balsamic.

Mostly these days I just ask for a wedge of lemon, a couple of carbs but you can see 'em!

I make my dressing using olive oil and red wine vinegar, which has fewer carbs than balsamic. I throw in some dried Italian seasoning and YUM!
