Recipe to feed a crowd

My kids swim team is hosting a breakfast next week and we are being asked to bring something. I don’t typically eat breakfast, especially organized ones away from home, but I don’t want to be the skinny bitchsnob thats not eating any of the food (which will most likely be almost all crappy carbage) so Id like to make something easy, good, feeds a lot of people, and keto so I have something to eat and is keto but may not necessarily look keto. Maybe something with cream cheese? I don’t really want to buy a ton of bacon. That can add up $$. Any ideas are greatly appreciated!

I like making an egg/cheese/sausage casserole! I just mixed up all of the agige and stick it inna casserole dish and bake! You could also add peppers or other veggies, I just keep it simple!

Not a recipe as such as I never weighed the ingredients but a “go to” when taking foods non-Keto friends are to be fed brekkie style I resort to “egg muffins”.

I just fry up some bacon. Optional is to add some chopped asparagus or tiny brocolli florettes or chuck some spinach into it in wilt it. Then beat a whole bunch of eggs and you add the previously fried up bacon and veggies and season to taste. You can grate some cheese into it or stir in some ricotta cheese but not essential.
Just pour into pregreased muffin tray and bake at 180deg Celsius fan forced until they rise and centres are firm.

Let it cool then pop out of the tray.
Yummy and easy and great to take to events where people just pick up food with their fingers and munch on

My hubby is from Europe and when we are over, everywhere we go they always have meat (ham, etc) and sliced cheese trays on most tables for breakfast.

They don’t get the same crunch, and can be a tiny bit dry (just add more sugar free syrup) but my kids prefer this recipe for pancakes and waffles to standard recipes. I double or triple and use a waffle maker, they freeze very well.

can make Canadian bacon/Ham egg and cheese cups, take ham or Canadian bacon and put it into muffin tins, put egg, and cheese, bacon pieces, whatever you want, sausage… bake them, they hold together, can make a bunch, don’t really make a mess…

My mind immediately went towards something like a bacon, sausage, egg, and cheese casserole type dish. Seems easy and cost effective and you can scale it up for a lot of people. Also, those aluminum roasting pans are dirt cheap and might make cleanup easier.

While I’m sure it will be good that’s not what most people would consider breakfast.

Quite true but the things they have on their list of items you can sign up to bring is all crappy carbage: bagels, muffins, sweet rolls, orange juice, Doughnuts. There will be teenagers there so I have no worries that a tray of meat, cheese, pickles, and olives will go untouched, lol.
