Well when you’re daughter goes off to college it’s time to clean out the pantry. I did this when I started keto about 1 month in. I am a bit of a disaster prep guy living on the central California coast (recent quakes were south of me), a few miles from the San Andreas Fault and a couple of smaller ones that intersect in Santa Cruz. I’ve been here so long often I don’t even notice the small quakes. We had a big one in ‘89 that trashed most of the historic buildings.
Anyway starting keto I filled seven large boxes with everything carb laden in my pantry and gave them to a friend who is an elder in the LDS church, they have a food bank. While I did feel a little bad about giving poor families all the food I decided was unhealthy junk, I thought hungry children would be better of with it than without.
I felt good doing something for others at the same time as making a commitment to change my life for the better. And it made it easier to stay with the program I had laid out for myself never looking back. I developed a mind set that those foods were basically poison that was rapidly leading me towards diabetes and an early death.
I have a 25 year old autistic son who needs me in his life as long as possible, he has no siblings. I was always worried and scared about what would happen to him when I am gone, and still do sometimes. But I’m doing everything in my power to make the goal of being here for him a long time. I just turned 60 and have been through many a health crisis which I won’t go into here. Keto is fixing most of my issues including looming depression and anxiety. I have lost 25% of my body mass in under a year and I am close to my goal weight. You can do this too!
