Reading food labels... NET carbs

Hi all! First time post, long time reader of this community.
Quick question with respect to carbs on food labels… I understand carbs minus fiber equals net carbs, but sometimes there are other carbs that are not accounted for. For example:
Total carbs 30
Fiber 5
Sugar 10
Net carbs 25

What are the other 15 carbs that are NOT sugars? Assuming no sugar alcohols, what Other carbs are accounting for these 15 carbs? Do they matter in a keto diet?

The left over is starch, and yes it counts, digestion turns it into sugar.

Total carbs is sugar + starch + fiber.
Net carbs is total carbs - fiber.
So the starch portion does matter but it’s included in the net carbs number.

That was my solution. After settling in to being keto adapted I found a good safe level of total carbs in a day. About 30. I also found if I know I might eat out and indulge a little more stir fry if I drop my total carb for a couple day before I can easily do a single meal of about 40-50g carb ONCE, without detrimental effects. A second day of that pushes my mmol below .5.

Apparently, in Australia the fibre amount doesn’t fall under the carbohydrate total, essentially being listed independently of total carbohydrates. Hence, as I understand it, total carbs on Australian food labels are actual net carbs (sugar + starch)?

Thank you for explaining the starchy part of this equation. I found a good overview explaining food labels (how to read nutritional label) and I think I now have a better grasp.
