So some inside foot ball here, I work in a cheese processor, that is were the cheese is shredded and put into bags.
The anti cake agent can be a number of different things depending upon customer and cheese type. Typically it is a very small amount of potato starch mixed with some natural anti mold preservatives. The amount is normally incredibly tiny in regular cheese, when you add “spice” that is when you need to be a little more aware, something like taco flavored is very common and those run much more and I would avoid.
The cheeses that have the most will typically be fine shred or what we call angel hair. The courser or fancy shred the less you will have. In cheddar the more mature the typically the more you will need, so a sharp cheddar will have the most and mild the least. Its very rarely used in Parmesan or hard blends, we use a small amount in mozzarella as well almost nothing. Jacks, montys gouda’s are all minimal. If you were to eat a whole package by weight of 12 oz you may consume 1 g on really bad mixed bag, but mostly its less than that by a whole lot.
Also organic cheese is different and may contain more, but it also does not contain the mold inhibitors.

Also, after work yesterday I went home and made a salad that consisted of:

4 cups of romaine
1 diced avocado
10 slices of bacon, crumbled
1/2 cup shredded cheddar cheese
Handful of olives
2 hard boiled eggs
2 tbsps Ranch Dressing

I also sauteed 1 cup each, of fresh green beans and mushroom (let them both simmer in a cup of water in a pan until soft and water is absorbed). I then added 2 tbsp of butter, some garlic powder, salt, pepper…mixed it all up and finally, sprinkled it all with some Parmesan cheese and had that on the side with my salad.

It all tasted soooooo good and filled me up and today I woke up NOT hungry and no headache (like yesterday). I feel great! It’s almost noon and I’m still not hungry!! Also down another 2lbs. So glad I ended that egg fast and started full Keto!!
