Not all potatoes are alike. There are some with a lower starch content. Potatoes are storage parts of the plant, and older potatoes (longer in the ground) tend to have a great starch content than younger potatoes (new/baby potatoes) that are less mature. Also, potatoes that are referred to as salad potatoes rather than bakers tend to have less starch… though that is relative. They are all high carb, but if you are going to have some potato, go for the new baby ones. Unfortunately, many of what they call ‘new’ potatoes in the stores are simply small potatoes that are sorted by size but are the same age as older fully mature potatoes. The only way to get true baby potatoes with a chance of getting ones with less starch is to grow your own…
Green Giant has developed a variety that they sell as CarbSmart which is reported to have less starch. ‘Lower carb’ - whatever that means to the folks at Green Giant. I don’t think they are available year-round however. I read a report that said they hit the stores in later November 2017. I don’t know what their carb count is however. Last year Whole Foods was supposed to carry them. Don;'t know if they did last year, or will again. Our local Whole Foods does not have them now. Other stores were reported to carry them too. They are something I want to check out. They are probably too good to be true.
A couple weeks ago, I took a small potato, grated it, rinsed off excess starch, mixed that with an equal amount of grated cauliflower, nuked it, mixed it with an egg, and fried it up. Yum. It was only a moderate amount, and did not affect my blood sugar in an out of ordinary manner. It’s not something I’ll do often, but it was worth it.
