Pot Liqour during IF?

(Erik Mcentyre) #1

I cook a lot of Kale and , in the soul food tradition, often have some left over pot liquor to drink. “Pot liquor, sometimes spelled potlikker or pot likker is the liquid that is left behind after boiling greens or beans. It is sometimes seasoned with salt and pepper, smoked pork or smoked turkey.”

I often cook the Kale with seasonings, extra pink salt, and bouillon. I know it’s calorie free but I wonder if drinking this during intermittent fasting will cause an insulin response. Any thoughts?

Thanks!

Just guessing - but probably not. When you think about those that are using bone broth during IF; this would be similar. The only thing in your recipe that may need a bit of consideration is to check the carbs in the boullion.

I doubt that it’s actually calorie free, as it has the dripping from the smoked item.

Yeah:

It’s all fat though, so depending on how you are doing your EF, it could fit in or not. Your call. N=1.

Only a culinarily-illiterate damnyankee (one word) who can’t tell the difference between beans and greens would call the liquid left in the pot after cooking greens ‘‘pot liquor’’ (two words) instead of ‘‘potlikker’’ (one word) as yours did. And don’t cite Webster as a defense because he didn’t know any better either.’’ Sincerely, ZELL MILLER Lieutenant Governor State of Georgia

The folks of Georgia would eventually elect Mr. Miller to Governor. I’m not sure if his lectures on the correct spelling of potlikker were a factor.

Raised as a child in the lovely and sometimes backasswards state of Georgia, I can state unequivocally, that a Sunday meal wasn’t considered well rounded until you have servings of collard greens and cornbread with potlikker! Sweet tea goes without saying, naturally.

Zell Miller just passed away this past week.

Awww, that’s sad. He served Georgia for many a year. :pensive:
