Peanut *Flour*

Okay, I may be late to the conversation here, (not a newbie here) but there does not seem to be a lot of solid info on peanut flour (yes, I did search it and read through some conversations where it is mentioned).

I bought some Tru-Nut Peanut Flour yesterday after seeing that the 1/4 cup serving size has 6 grams of carbohydrate and 4 grams of fiber. That’s waaay better than almond flour’s 2 tablespoon serving size.

I made a cookie with 1/4 cup of peanut flour, 2 tablespoons of 100% natural, no sugar added peanut butter, a stick of butter, a tablespoon on swerve and an egg. They turned out pretty good for a first try.

Still, I question the peanut flour because peanuts are legumes, not nuts. Sure, it fits in my macros, but…

I kind of feel like I should just toss it because it isn’t really Keto. Or because it is processed. But the only ingredient listed is just roasted peanuts. And its lower in carbs than almond and coconut flour.

Anyone have thoughts on this?

Why are legumes supposed to be bad? I’ve never seen a reason, just the assertion.

I avoid peanuts because they are the crack cocaine of nuts and nut-like entities. I can (mostly) control my almond intake, and most other nuts I can take or leave, but peanuts . . . :scream:

@PaulL you know how die-hards are, lol. Peanuts are a serious weakness of mine too, which is why I liked the idea of a very low carb peanut flavored “cookie”.

I have seen some keto peanut butter cookie recipes before, but they use lots of almond flour + peanut butter for the flavor and they end up too carby IMO.

This recipe I made only has 2 tablespoons of peanut butter in the whole batch because the flavor comes from the peanut flour.

I still feel like this is too good to be true because the whole batch (12 cookies) only had like 6 or 7 net carbs. So each cookie is like a 1/2 carb.

I dunno… it just seems fishy, lol.

Sounds great, Jay. I wouldn’t ignore that cookie. :stuck_out_tongue: (I don’t think it does any massive damage if you watch how many you end up making/eating). Peanuts don’t really do anything for me. It’s the pecans, walnuts and cashews that are seriously dangerous…very dangerous with spicy antipasto and dry cottage cheese. :scream::scream::scream:

Whole almonds, chopped almonds, almond meal, almond flour and almond butter can be basically the same nutritionally when the only thing that varies is the amount of chopping. Although the more processed forms can digest faster and more completely which is largely ignored by most nutritional databases and tracking apps.

The same can be true of peanuts in various forms. But watch out for additives and subtractives like defatted peanuts.

Th only objection to legumes I’ve seen is carb count. I know some people use a very small amount on occasion, especially in maintenance. If you think the carb counts are accurate enough and you aren’t over indulging, enjoy your cookies!

Note, this is made from pressed/defatted peanuts which means the percentage of calories from carbohydrates is increased versus whole peanuts or peanut butter.

Well the good news is that I have now eaten two batches of cookies made with this peanut flour over the course of a few days and I haven’t gained so much as an ounce as a result.

I have concluded that while they may not be perfect, they are still 1 million times more Keto than anything Atkins or Weight Watchers makes, lol. So if I have a hankering for a cookie, I know what to do.

Modified recipe, if interested:

1/4 cup Tru-Nut Peanut Flour
1/4 cup coconut manna
2 Tbsp Swerve
2 Tbsp HWC
1 Stick of butter (8 Tbsp)
1 Tbsp vanilla extract (I make my own from vanilla beans and vodka… aged, of course)
1 Egg
1Tsp Baking powder

Makes apx 24 cookies. Or 12 giant cookies, lol.

Bake them on the middle rack at 350 until the edges are brown. Let them cool all the way… they fall apart easy.
