There’s a lot of ways to do BBQ, and all of them taste fantastic.
I’ve got a 30 gallon drum barrel smoker, a classic Weber 26 fitted with a 316L stainless steel Slow-n-sear, and a Weber Genesis gas grill. Even with all that gear, one of my favorite ways to BBQ a steak dinner for two is to put it in the oven at 250 degrees F until the steak hits 110 degrees, and then sear it outside over a chimney starter with red hot coals for about 4 minutes. There is basically nothing that puts a better sear on steak than a $20 chimney starter with a $5.00 grate on top.
