My preferred method is to bake my pancakes as little rounds, then use them as desserts by heating them up in the microwave and putting some SF maple syrup on them.

Just did a batch of egg loaf today (think French toast). I prefer them over the pancakes. So easy. Just dump everything into a blender, liquefy it, then I have a small ladle that holds a perfect size portion for each cupcake mold. A batch of a dozen costs less than $2.
