Have anyone ever heard of Oats fiber question mark is supposed to be zero net carbs. I guess because the fiber is 100% non-digestible. Is this something anyone use?

I think you may have meant Oat Fiber? I don’t see anything for Oak Fiber. … But this is what pulls up when I looked it up. (But have never used it myself.)

I just got some and used it instead of almond flour to make truffles. I used 1/3 of the volume of oat fiber as I did almond flour. My recipe calls for .5 cups (48 g) blanched almond flour, so I used 2.66 T (14.63 g) oat fiber.

The chaffles came out fine, and tasted the same as with almond flour.

I’ve never heard this brought up in this form. I wonder why. I learned about this from a vegan believe it or not. That’s also where I learned about vital wheat gluten. Have you ever used vital wheat gluten? What do you know about gluten
