What are the parts of a carbohydrate that make up the total on a nutrition label? I know that there is fiber and sugar, but those two amounts do not always add up to the total carbohydrate amount. I also know that alcohol is a carbohydrate, but not listed. The example that I have is for Brazil nuts.

Carbs generally fall into 3 categories: sugar, starch and cellulose. Sugar and starch are digestible . Cellulose is not digestible and falls into the ‘fibre’ or non-net carbs.
That macro label indicated about 2.9g of starches.
Brazil nuts are great for selenium as is black pepper.
