I’ve spent most of my career working with pregnant moms and newborns (not saying you’re necessarily pregnant or trying to conceive, just the common “off of BC, starting folic acid” regimen in those situations), and have heard many complain about the effect of folic acid on their digestive system, including bloating. I wish I knew what to tell you; I wish I had an easy answer.
I have heard that bloating while on folic acid can happen because of low stomach acid. I have NO idea about the science or evidence for this, but it might be a rabbit hole to peek into and investigate?
High amounts of protein, from what I understand, can knock a body out of ketosis.
My current hypothesis about the lack of weight loss is this: first time around, keto worked because you were essentially following a CICO diet, which can work in the short run, without curing the problem. So when one goes off of it, all of those pounds come right back because their metabolic rate has been reduced. This time on keto, your metabolism may be so low that your body isn’t primed to lose weight. It doesn’t know what to do and is worried it is going to starve again, so it might be clinging to those pounds.
I think you might find that if you increase your fat content a lot, reduce that protein, and consider upping your calories, you can help reassure your body that you aren’t torturing it and train it to run on fat at the same time
