Noodles Substitute

Hi all; been lurking for awhile. My first contribution…

Came upon this discovery by accident… As part of my noonday or OMAD meal, l have a can of chicken soup. Nourishing, quick and easy. Usually augment it with a couple of spicy, fatty chicken meatballs cut into quarters. Lately have been more strict with carbs so have been removing the noodles from the soup with a fork. Well chicken soup just isn’t as good without the noodles. One day to substitute for the meatballs, I sliced some already sliced processed turkey and ended with something that looked like noodles. Didn’t think much of it but the taste and mouth feel was just like noodles! Life is once again good. I now have cut back the meatballs in lieu of my new noodles solution. Try it, you might like it…

It’s a good idea. In fact, I 've done something similar. Thinly cut chicken or turkey loaf from the deli can be used as noodles in a layered casserole, like lasagna, or as tortillas in a dish of enchiladas.
