New to Keto and need some help with my unique circumstances

A little background on me. 3 years ago I was in amazing shape (ultra marathon shape) Ran 40-50 miles a week, hiked/trail ran on the weekends went to the gym 3x a week and was just in generally amazing health. However around 2 years ago things started changing at work, with reorgs and the like and my job of 11 years became much more intense to the point where I was traveling 6 days a week for work eating out all the time, and pressed for more and more until exercise and health were pushed to the back burner. fast forward 3 years to today, I’m nearly 100lbs heavier, I can’t function and I’m depressed all the time, but feel trapped in my career because of student loan debts I still am coping with and I don’t exist outside of my work. Simple tasks are immensely more challenging and I know i’m on this downward spiral towards a short and miserable lifespan. I needed to make a change and over the last 9 months I’ve been devising a plan to make myself better. I decided to quit my job (5 weeks from the time of this posting is my last day) and hike from Canada to Mexico starting July 1. I used to love going outdoors and hiking and recall those moments as some of the best of my life, however I hadn’t been able to find the energy or desire to do so in my current state. Going to the present week now, I decided while I have a lul in things with work as I’m not pressing myself or being pressed at the moment given my short time left at my company to start trying to clean up my act and get ready for the epic hike (which up until now still felt impossible to me) and I started to do some research on dieting etc. I first found myself heading down the path of learning about benefits of fasting and intermittent fasting which then ultimately led me to Keto. I started last Sunday with a 24 hour water fast to push myself into Keto and help my body adjust and then switched to a full Keto diet while also adhering to a 16/8 intermittent fast. After 6 days I absolutely feel amazing. I feel like I used to, the depression and lack of ambition has diminished. I’ve been more productive this week than I have been for at least a year and probably more. I found myself taking 2-3 hour walks most days and then finally started hiking to get myself prepared. I love this energy, general feeling of wellness, and endurance I have as a result of my dietary shifts. This however leads me to my big question/concern. I’m still planning to hike all 2600+ miles to mexico living out of a backpack and a tent, and will only be able to resupply food in towns every 3-7 days, however part of my plan all along has been to order some of the supplies I need from Amazon along the way and use that to help supplement my needs. With all that being said, I’ve found some ideas and tips for backpacking meals while on Keto, however I have many concerns about most of what I’ve seen as those seem very short term solutions and with the intense amount of stress i’ll be putting on my body hiking 20+ miles a day every day for 4 months I feel I need to be more concerned with ensuring I get all the micronutrients my body will need along the way to function properly. I am searching for answers to that and hoping some people here can help. I already feel confident that I need to make sure I am carrying salt supplements, but I highly suspect I should be carrying potassium as well. I also want to be able to make this sustainable and feed myself with various things that are both lighter weight to carry, but also satisfy my hunger in a variety of ways so I’m not stuck eating the same exact thing all the time. I would appreciate any ideas and feedback you guys can offer to help me with this ambitious goal.
