Never believe the "keto" claims until you've tested yourself
I love Thai food but, they use A LOT of sugar in their sauces. Before going Keto I used to make some dishes at home and was amazed, even then, how much sugar is used. Specifically palm sugar, which is not any healthier than any other sugar, it is still sugar.
Feel sorry for the poor lady in the video, to bad she does not know about Virta Health, Fung and Keto etc…!
We love Thai food, and I went out of ketosis with just a bowl of soup. Crashed me.

It seems I am fighting an on going battle to stay in ketosis. I have Crohns and this the life style change. I lost weight in the beginning but have plateaued and just can’t seem to get there. My health has improved immensely, my sons autism symptoms have also improved. Our family has gone Keto lifestyle.

Also hubbies BP mess cut in half and doctor told him continue on this lifestyle and he believes he can discontinue all together.

You have to watch the thickeners they use. I had a large blood spike from “hot and sour” soup, which had nothing (ostensibly) but veggies and shrimp in it.
What are you (approx) running at on a daily basis? Carbs/Prot/Fat/Cal
And see I have to opposite response to monk fruit; my BG goes down which would indicate a large insulin response. But you are correct testing is personal knowledge of you.
It may not have been the monk fruit — could have been other ingredients. As others pointed out, there was corn fiber and other exotic stuff in that particular product. Who knows which of them I was reacting to.
I keep my meals as simple as possible. Meat, veg. Usually that’s it. I make my own sauces so I know what ingredients are in them.
When I go out, I do the best I can. I ask for melted butter if I’m wary.
Maybe track really seriously for a week and see what you can see.

Bulletproof coffee in the morning
Fresh salad for lunch(sometimes) with homemade avocado oil and balsamic vinegar. Salt and pepper to taste (sometimes)
Dinner, a protein (chicken, pork, beef -sometimes - liver, shrimp rarely… etc…
Desert maybe whipped heavy cream with caco powder erythritol topped with raw coconut walnuts. Mug cake.
I’m usually not hungry until dinner.
Yeah, I think you’re right on the monk fruit. I’ve heard it described basically as Fructose in another form, not surprised it causes issues.
I highly recommend The Obesity Code by Dr Jason Fung. It’s a mostly good and easy read.

I’ve learned a couple things recently and I’m at 2 years also. Down 50 lbs now and starting to build my frame out with muscle which is easy to start for me because I’m scrawny now. Anyway the quickest fat loss comes with prolonged water fasts using not fresh water but salt water with potassium chloride added and baking soda. BOOM! That is a game changer.
