Net carbs in Garlic Scapes? (from Hardneck Garlic)

I grow a lot of Hardneck Garlic (700 heads) and I have an abundance of the Scapes which I quite enjoy and are very nutritious.
Thus, I have pounds of it in my deep freezer, but I can’t get an accurate Carbs # anywhere, and it stops me from consuming it. Some websites say almost zero, while others 35g+. Very Frustrating.

Can anyone offer any assistance?

Interesting. I had never even heard of garlic scapes. I would imagine since they are basically “garlic greens” growing above ground, they would be pretty low.

I’m curious to see what the group figured out. I’ll have to keep an eye out for some next time I’m in California garlic country.

No I didn’t… however I have done some personal trials with 100-150g servings and surprisingly, my head didn’t explode.
Thus, I have no issue eating them, and continue to.
I would encourage you to do trials and see your tolerance.
I think it’s YMMV though.

Warning:
Scapes and/or fresh Garlic while on lchf/Keto gives me super duper gas… just like putting vinegar into baking soda. Don’t eat them before going to the theater!!!

Laughing, I came looking for carb count of scapes for exactly this reason! I don’t normally experience gassiness while in ketosis.

I found ‘garlic stems’ for sale in the asian supermarket. I had only encountered garlic scapes once before when I belonged to a farmers food co-op. I was so excited and figured they would be of low-carb content since they were above ground greens.

I roasted them with pork neck bones. They were deliciously sweet and savory at the same time. I did notice I felt unusually full the rest of the evening.

I woke up this morning sounding like a one-woman pipe band!

I can confirm garlic scapes make you gassy!

In terms of carb content, based upon taste, I kept thinking they tasted very sweet, reminding me of carmelized onions.

Based on your experience, maybe the amount of fiber offsets the carb content. I hope so, because I have 3 servings left of tender neckbone meat and garlic scapes waiting to be enjoyed!

Local garlic growers sell them here. Fresh garlic scapes are so delicious–taste is like a cross between garlic and onion somehow. I guess they are too carby to eat as a veg. Maybe okay for seasoning.
