I am 9 days in to my keto diet. I have found the carb / sugar cravings hard to be honest but i think they may be beginning to subside a little. One of my problems is that i am not confident in my “net carb” calculations. I havent been counting so far - i have just been strict in limiting total carbs and feel that i may be missing out on foods i can eat. I know that that the principle is to deduct the amount of fibre from the total carbs but i’m just not confident enough to try in case i ruin the hard work i’ve already done. For example, i have found a chocolate (85% cocoa, sweetened with stevia) that shows 18.7g carbs per 100g (of which sugars 3.2g) but fibre is 34.8g. Obviously if i deduct the fibre amount from the total carbs, i am left with a net deficit. Surely i can’t just eat as much of this as i’d like? Please help

So fibre is not included in the carb count in the UK only (so far as I know) in the USA.
Thus your choc has 18.7g of carbs per 100g and 34.8g of fibre
In the USA the carb level would show as 53.5g per 100g (although there they use “serving” rathe than 100g so it all gets very messy).

Well you can have it in moderation. Which one is it?
I go for the Lindt 90% which is 14g of carbs per 100g so 20g (2 squares) is 2.8g of carbs not bad if it fits in your macros.
There is also the Green and Blacks 85% which is 4.5g per 20g
I also found one called Cavalier which has stevia as the sweetener also 4.5g per 20g and no spike for me.

I only have this stuff as “treat” not everyday. If you like ice cream try Oppo which is 8g per 100g carbs and is another of my treats otherwise I try to go for foods that are 5g per 100g of carbs or less.
