Random topic:

I was looking for a new roll of parchment paper for making some bacon and i stumbled upon some very old containers of the following (that quickly made their way to the trash)

1 opened 10 pound bag of bread flour
1 opened 2 (?) pound bag of white flour
1 opened bag of brown rice (likely rancid)
1 opened bag of confectioners sugar.
2 opened containers of french fried onions
1 opened container of chia seeds (not sure if these are keto but likely rancid as they are at least 2 years old)

I’m afraid to go looking through some other cabinets that I haven’t been to in a while.

Oh and unless there is a good (and worth the effort) keto bread machine recipe, I think it’s time that this dinosaur makes its way to the donation pile.

This was really good but I did the regular version since I don’t own a bread machine…

I tried it twice (both times by hand, I don’t have a bread machine either) but it still needs tweaking for me. My dough came out way too wet the first time and I think I got the ratios a little mixed up the second time trying to use less flax.

I have wondered whether being at nearly 2000 ft elevation might make some of this stuff different than say, someone at sea level. I know I have to cook my eggs longer for a good hard boiled egg.

I’d personally be hesitant to use wheat gluten or oat fiber at least at this point in my journey

I’ve not found gluten or oat fiber to be a problem here. I don’t have either regularly or in significant quantities.

Your experience may be different. If it could be a problem for you, it’s best to avoid.
