My favourite example of this was within the same week on the BBC News website there was an article about the evils of nitrates and nitrites in processed meats, and then another article appeared less than a week later, talking about how miraculous beetroot is, and ascribing its healthful properties to “special chemicals within called nitrates”.

yep and the reason these studies are crap is because as Richard suggests above you can not seperstevone food stuff as we all eat a wide range that all have an impact
