So I got this beautiful big beef brisket. Covered in beautiful fat. I decided to cook it today in the crock pot while I went to work. I turned it on low and it was smelling so good when I left that I was drooling! Alas, when I got home it didn’t quite smell right, I rushed into the kitchen and found my beautiful brisket had become a hard piece of charcoal… I’m getting rid of that crockpot POS (and it was one of the nice ones with a removable crock). :sob::sob::sob::sob::sob::sob::sob:

How long have you had the crock pot? If it’s under warranty take it back. It means that it’s overheating. A big hunk of brisket on low can go for 8 or 9 hours and still be fine.

I’ve had it for about 15 years, but I rarely use it. Next time I’m just going to use the instant pot and cook it fast!

Don’t you need to cook it low heat and for a long time so that it’s not so tough? That’s why smoking it for 18 hours is the best way to cook it. But alas, we don’t have a smoker so we use the crock pot.

The pressure cooker can do that fast. Besides it’ll probably be a very long time before I can afford another brisket.

Oh I’m so sorry! That is disappointing. And it’s especially hard when you think something is ready when you get home and you have to think of something for dinner. I hope it was something tasty at least.

I cut all the hard burnt outsides off the brisket and there was a little part inside that was moist (and very fatty). I ate a little of that and put the rest away for my hubby. He got home and picked up a piece of the hard dry part and popped it in his mouth and said “yummm, jerky!”. Then he ate the salvaged meat I had put away for him and said it was delicious. He’s so sweet. I ended up eating a plain yogurt with a handful of blueberries.

That definitely sucks!

I’ve cooked brisket in the oven before, at 250 for about 12 hours if tightly covered in foil. That may be worth trying the next time you can afford one. Plus, you can cook a really big brisket flat, instead of the size that fits into the crockpot.
Darn it, now I need to start rolling change so I can pick up a brisket, I’m drooling :grin::joy:
