Low carb noodle dough for homemade Perrogies

My family grew up on Perrogies. However, between the noodle dough and potato based filling they are a carb explosion. I’d like to make more carb friendly Perrogies with low carb noodle dough and a cauliflower mash and cheese filling. My question is this, are there any recipes to create the noodle dough with coconut or almond flour. Desperate since I have 4 of the original goodies in my freezer that I can’t eat. Thanks.
