I literally no longer crave hamburger buns or hot dog buns with my meet. I still use keto bread for my sandwiches but I am perfectly comfortable with a lettuce wrap over my hamburger with rutabaga fries and sugar free ketchup
Lettuce wrap
I’ve started doing that too. A burger patty wrapped in lettuce with an egg and some cheese. Don’t miss the buns at all. I also wrap bacon in lettuce. Lettuce goes with most things well.
I use Joseph’s Lavash Bread for a lot of the hot applications I might normally have used bread for. Otherwise, for cold sandwiches and such, I just make a cheesewich, where the cheese slices act as the bread.
I normally cut up the sheets of Lavash bread into bread-sized squares to have them readily available. Last time I bought a head of lettuce, I was wondering if I could cut down on the four sides and leave a “core” of bread-sized squares. I always have problems getting leaves off cleanly otherwise.
Chaffles are great for sandwiches and burgers as well. Last time I made chaffles, I used something similar to this “Puffy Cheese Puffs” recipe for the batter:
- 1/4 cup mozzarella cheese
- 1/4 cup cheddar cheese
- 1/4 cup almond flour
- 1 egg
- 1/2 teaspoon baking powder
- Pinch of salt
Mix and divide into 4 balls. Bake for 10-12 minutes at 400°
I lettuce wrap just about everything. Sandwiches, street tacos, burgers, whatever. I keep some clean ingredient grain free bread in my freezer and make chaffles on occasion (like today), but I’ve come to prefer a crunchy wrap of lettuce over anything else.
