Yes, definitely add fat. Growing up it was tallow that we would add. A lot of bacon fat also got used, but it will shift the flavour profile somewhat.
That reminds me, time to pull some moose steaks out of the freezer!
Consider “Larding & Barding”. Larding is when you insert strips of fat into a piece of meat. Usually with a Larding Needle. Often these “Lardoons” are marinated. Barding is wrapping a piece of meat with fat, secured with string or toothpicks.
It’s pretty traditional with venison and other lean game meats.
I find the trick to cooking moose is to cook it in bacon fat. Do salt it before tossing on the cast iron. I’ve found that the tough cuts are best cooked slowly. Cooking moose too quickly leads to a very tough steak in my experience.
Definitely add fat. I’ve never shot a moose but when I get some venison I always cook it in butter and typically add garlic (or marinate in some wine ahead of time if really gamey). The meat desperately needs moist fat.
