Keto Tater Tot Casserole

So, I’ve been teaching a healthy cooking class at my kids’ school :slight_smile:
I’ve asked the students what they would like to learn to make. One boy said “Tater Tot Casserole”…I’m trying to find a good way to make it keto-friendly.

My thoughts are:
Swap in riced cauliflower & crushed pork rinds for the tater tots.
Swap in ??? for the cream of chicken soup. Maybe thicken up some heavy cream with cheese (melt them together).

That’s one I would not attempt. I’ve had some reasonable mac and cheese made from cauli and cheese, but tater tots are so tough to replicate.

By the way, what is it with websites playing a massive video over basically the entire website? Even Nom Nom Paleo does this, so I’ve ceased going there.

So I found a recipe that seemed to work…although I think the next time I’ll just use garlic salt instead of pressed garlic. I basically doubled it, except for the cream of chicken (instead of mushroom) soup.

It wasn’t too bad, baby seemed to like it. My older boy somewhat liked it, though I think he’d like it better w/o the garlic. I feel similar.

I am not sure if cooking keto for kids who otherwise eat a lot of carbs when they get home is a good idea. All that fat PLUS too many carbs could really lead to weight gain.

My kids eat keto at home and at school (with the occasional small candy treat)

I am sure your kids do! :))
But most other kids eat SAD. And for those kids, our high fat diet can lead to weight gain in combination with sugars.

True. But, in the context of me teaching a healthy cooking class, I asked what students would like to cook. One said Tater Tot Casserole. So, I was looking for a keto version. If/when we make it they are all going to get a small portion. Maybe they will be able to take what they learn and make some decisions for themselves for when they are older (or maybe encourage their families to eat healthy) :slight_smile:

Oh yummy- I just saw the recipe. Drool. Is a can of mushroom soup keto? I have to get some.
I suppose if they can eat tater tot casserole with potatoes then they can eat it with cauliflower too! LOL

Its kinda keto. Its 10 net grams per 1/2 cup, with about 2.5 servings per 10oz can. I used only one can in the 9x13 pan, so it probably came out to like 5 (or fewer) net grams for how much I ate. Plus, with a good fatty salad you probably wouldn’t eat a whole bunch of it.

In my opinion eating keto in any percentage of someone’s diet is superior if it’s replacing processed foods. There are surely ways to replace the canned soup as well if you wanted to take it a step further. But if keto tater tot casserole and a salad is replacing Pizza Hut or some frozen processed pizza I say that’s a win. :cowboy_hat_face:

It looks delicious, I have never heard of this before this thread. It must be an American meal thing --but it looks really great =). I think it is awesome that you are giving these children insight into some healthy eating!
