Keto stuffed bell peppers

Oh my gosh I made the best keto stuffed bell peppers ever. I just wish I would have made more it was such a huge hit with my family! Here’s a before and after picture of the stuffed bell peppers.

Whenever I do stuffed peppers, I microwave each pepper for 2 minutes. So, I remove the stem and seeds and cut it in half, then put it into the microwave as I start the next pepper, and repeat.

This makes the peppers a lot softer when they come out of the oven at the end. Plus, the first thing I do is put a layer of cheese on the bottom. Since the peppers are warm the cheese form-fits the inside of the pepper.

My topping is usually pepperonis with jalapeno cream cheese spread on one side, then dipped into Parmesan cheese.

Brilliant! Thanks for the tip. I usually roast them for 20mins and then fill them! This saves a bunch of time! I :hugs:
