Keto Sauce thickening?

Hello. This is my first time talking on this forum. Great source of information thank you. My dad had a stroke a few months ago, he’s doing really well. All his liquids need to be thickened dew to swallowing issues. I use an Australian product called thick-n instant. It appears to be very low in carbs. Would anyone know if the is suitable for keto? As it would make a great thickener for stews, soups and maybe even desserts.
Here’s a link to there website. https://precisethickn.com.au/products/thick-n-instant-bulk-serve/

Welcome Darren. It says it has 0.01 g of carbs in 100 mg of product. I’m not sure how much you’re using but based on that information you should be able to measure out what you give him and calculate that into his daily carbs. 100 servings would be 1 g of carbs. The entire package has 6.5 servings. Most folks try for under 20 g carbs a day to remain in ketosis. Basically, yes, it’s very low in carbs. I hope this helps!

I’m not an expert, but it looks pretty good to me. Some of the ingredients might bear a second look, but I doubt they would knock you out of ketosis. I wish we had a good keto thickener here in the /states.

Thank you. Yes it looks very low carb. I use 2 serves to thicken my dads mug of tea to a yogurt consistently. It thickens anything hot or cold.

You got my curiosity, the non specific ingredients I had to look up, basically gum emulsifiers and Pectin.

(412) Guar Gum

(415) Acacia or Gum Arabic

(418) Gellan Gum

(440) Pectin

Some people are opposed to emulsifiers, there are claims that they aren’t healthy for the gut. Xanthan Gum is used by many gluten free and keto recipes. I use it occasionally myself. I think it’s okay on the terms of fitting into KETO for sauce thickening if it works for your purposes. However you are adding water too so if you’re thickening a pan sauce it will dilute it. I just mix Xanthan gum with a tablespoon of oil for easy sauce thickening. :cowboy_hat_face:

Thank you David. Good advice. It just my curiosity up as well. Learning about the science behind it all is fascinating

Mm looks ok. We use it in the hospital for thickening patients drinks if they have swallowing difficulties. I never thought to look at the carb count and consider it as a keto thickener!
Thank you!

Good luck to your dad; I hope you are both seeing progress.

I use xanthum gum. I bought a small bag of it and I think it should last me about three years, you use so little of it. I use it for thickening when I make cheese soup. For approx. 3 cups of liquid, I only use less than a half teaspoon. It works great. You definitely don’t want to use too much as it thickens very well. If you do try it, you need to dissolve it in some butter or olive oil or else it stays lumpy.

Brace yourself - I use…pork blood.

I use xanthum gum with hot liquids. I’ve been told that guar gum is better for cold liquids.
