Keto pancakes for breakfast

I just made really great keto pancakes that were so easy. Using unflavoured pork rinds!!

2 eggs
2 tbsp heavy cream
1 tsp cinnamon
1 tsp monk fruit
pinch of salt
1/4th cup ground pork rinds or pork rind panko

I added a pinch of baking powder too ( my own decision)

So easy and so good! I am sure there are a lot of pancake recipes out there- but this was really simple and delicious. It was on a youtube clip under the title of 10 things to do with pork rinds.

If I can’t have boysenberry syrup with them what is the point?

Hello and welcome back! I have no idea what boysenberry syrup is. I have never in my life eaten pancakes with that. But you can buy sugarfree maple syrup?

Being naturally lazy, I make my cream cheese pancakes in this bowl in the microwave and call it ā€œa big bowl of custardā€:

  • Combine cream cheese, eggs, vanilla, cinnamon, sweetener in bowl and thoroughly mix (I use a magic bullet and wash it during microwaving)
  • Microwave in 30-second bursts, stirring in between, until set
  • Top with sugar free maple syrup
  • Eat out of bowl

Another version that I bake is egg loaf.

Ooooh, sounds fab! What are the quantities, @OgreZed ?

As it’s Pancake Day on Tuesday I reckon I might have a go. It’s only once a year, so why not? Usually I do a ground almond pancake batter, but I’d rather just use cream cheese and eggs!

I used to get boysenberry syrup at Denny’s and IHOP. Denny’s quit carrying it and then IHOP. IHOP told me people steal it from the tables. If they have it is is in the kitchen. You have to ask for it.
I’m a one way person. Boysenberry or nothing. I’m old. I can do that. :slight_smile:

too many carbs in boysenberries? I mean, some berries are allowed in the ketogenic way of life?

I tend to avoid fruit, apart from lemons and limes, because my glucose monitor freaks me out with peaks that are too high for me to be comfortable with. But many keto-ers do eat berries. I can’t, unless I resort to extra insulin (T1D), which of course I can do, but I prefer not to.

Mind you, I’m not sure I’ve ever heard of boysenberries!

I don’t know what boysenberries are either. I am happy with sugar free maple syrup. In fact- I ate them WITHOUT the syrup because I didn’t want to create an insulin spike even with the sugar free stuff.

Same ratio as regular cream cheese pancakes – 1 oz of cream cheese per egg. Anything else is to taste. And when I do the egg loaf, I throw in 8 ounces of cream cheese and 8 eggs, with an added stick of butter.

I don’t do them anymore. No more pancakes either.
I’m sure the carbs are over the top.
