Good to see someone posting a recipe I love - eggs in purgatory. I’ve made that a couple times. Very tasty treat for someone on keto.

Looking at these recipes I start to realize I make some super simple version My veg is the tomato and I use some condiments (they contain more tomato, pepper and onion I think). No other vegs, no added fat and no cheese. Wow, cheese, never knew that is an option… And we never ate it with bread (my SO eats it with rice), I have learned about the dish on this forum so maybe that’s why I had no idea people do that, not like it matters.
But it’s still great. Eggs are good, tomato is good. Simplicity is good.
I do plan to try out new versions (cheese and chili sound good, for example) but I won’t complicate it much. I really like dishes with just a few ingredients, I noticed that I can skip most of the others in nearly every case. Each to their own, of course and I have exceptions myself but eggs are so perfect taste wise that they really don’t need much extra help.
I have used a recipe similar to the first and also one using squeezed handfuls of my sweet 100 garden fresh tomatoes which are amazing little flavor bombs. (Helps to remove some seeds or it can get a bit bitter but I never bother peeling).
