My baby brother always fries a rabbit for Easter, but he’s twisted that way! And besides, it’s easy for him to go to a grocery store and purchase a rabbit (he’s in Chicago). Me, on the other hand, well, suffice it to say that I’d have to lay in wait out in the backyard with the gun. Not! So having said that, I did find some yummy looking lamb chops that were marked down at my Walmart so we’re having baby lambikins this year instead of piglet! I also do deviled eggs and I’ll have to see what else strikes my fancy. It’s just the two of us so it’s pretty much up to the cooks discretion, meaning I can do whatever I want.
Keto Easter: How do you ketofy this holiday?
Rabbit sounds good! I’ve never prepared it. Only had it in a restaurant.

I don’t really know what “Easter” food would be. Colored eggs were always just hard boiled eggs for us. Candies, cookies, goodies and such can often be ketofied. Can’t say I was ever crazy about those marshmallow peeps.

I although I don’t celebrate Easter either our family uses that time to come together. I’m searching YouTube for a keto friendly ham, got one on sale for 5.00. my favorite cauliflower Mac and cheese with bacon and fried cabbage with bacon. I am thinking of yams with butter only but still just a thought.
This year we are not hosting anything. My sister hasn’t set her menu yet so we’ll wait and see and bring at least a keto side dish. She knows we eat low carb so I’m certain we’ll have options.
My dad is hosting the next day and we know there’ll be bbq ham. We’ve been asked to bring a green salad and are also bringing meatballs so we know we have more options. The other sides will be carb heavy so we will avoid those.
Easter breakfast will be at home and our time to go crazy with bacon, eggs, sausage, veggies, etc
Hubby and I are limiting chocolate to low carb and DD will get some chocolate but we’re reducing the mountain of sugar that she normally gets.
Lamb, asparagus, salad, …potatoes, rolls,for the family still indulging. Pretty keto.

so did a trial run tonight of smoked dry rubbed ribs on the Traeger (wood pellet grill). Just got it fixed finally and the smoke never worked right. they turned out great so I’m going to go pickup a couple of racks of baby backs to replace the Easter ham. then i’ll just do some nice cheesy veggies on the side (au gratin cauliflower, cheddar broccoli, etc)
