Keto Diet Doctor Roll fail

So I made diet doctor rolls and they were gummy and damp inside. They kind of felt like I was eating a sponge. Any advice on what I did wrong??

I’ve had that experience a few times making other keto bread recipes. I think keto breads benefit from low and slow cooking times otherwise you get a burnt outside and a gummy inside.

What I do instead is make flat rolls, like a round flat bread, that way they cook quicker without the uncooked centre.

I’ve modified a couple of recipes to use in a waffle maker with good results

I do something similar. I make a large flat bread. I roll it out as thin as I can get it and bake it. I cut it into squares and they are about as thin as naan bread. I’ve even spit that down the center to make it thinner after they bake. I freeze the batch and toast them as needed. I really just need a dry delivery system for my bacon, egg, and cheese breakfast sandwiches.

I make these for my husband and I get best results with making 10 or 11 small rolls and bake them at 175 degrees C for 35 min.
