Keto desserts for dinner parties

('Jackie P') #1

Hi! I had a dinner party last night and I thought I would share my dessert recipe with you and ask for any other ideas for dinner party desserts.
Lemon posset with blackberries in creme de cassis!
For the lemon posset I use 125mls cream and 1 lemon juiced per person. I use erythritol and I guess I use about a tbsp per portion but I know people use all different sweeteners.
Bring the cream and sweetener to a simmer for 5 minutes then add the lemon juice. Simmer for a few minutes more and pour into individual pots - I use stemless wineglasses.
For the blackberries I simmered a punnet with some erythitol and vanilla then pushed it through a sieve. I added just under a tsp of creme de cassis per portion it made an incredible boost to the taste but is entirely optional. Then marinate your blackberies - about 6 per portion and spoon them on just before serving!
Delicious but I need some new ideas!

There are many recipes for keto cheesecake. Yummy!

Yes I have tried a few. Very nice except I struggle with the base! I will probably make a traditional base and just eat the topping! I am the only Keto in the village after all!
Thank you.

I used to make ganache chocolate truffles. I use this recipe https://www.foodnetwork.com/recipes/alton-brown/ganache-frosting-recipe-1915833 as a base, I make sure to use high quality dark chocolate without additives. Just chocolate. I whip it up until fluffy (described in the recipe as a “lighter frosting” but I keep beating it with a mixer until it is really light). If you are feeling indulgent add a table spoon or two of gran mariner or other liquor and whisk it in well. Then I put it in the fridge for a while until it is firm. Use a melon baller to scoop then toss in plain cocoa powder, coconut flakes, or crushed nuts. I miss those, haven’t made them in a year. I used to make them every Christmas and on my husbands birthday but I haven’t made them since Christmas before last. I think I might have to make them this Christmas or New Years.
