Where does the corn taste come from?
Or are these just corn muffin shaped Keto muffins?

You can get a corn extract on Amazon it really makes a difference in the taste.

Matt and Megha do a cornbread too. I haven’t tried it yet but it’s on my to - try list. I haven’t looked at the corn can labels as of yet to see if it legitimately could be keto but they do have some really good stuff on their site.

Now that’s interesting. I was wondering about the corn taste too. And when I think about it. almost flour (at least the stuff that we have) is kind of course, with a texture similar to corn bread :slight_smile: Will look for that corn extract now… Then have a try at making this bread :slight_smile:

Edit; Wow ! That stuff is expensive ! The only one with prime shipping is $24 for 2oz ! Not today.

We do need to use our Almond flour though, so will probably try these muffins without it. Kind of quit using it when we started making our yeast bread with Oat fiber and vital wheat gluten… So we have a surplus left of the Almond flour…
