Homemade Keto Chocolate Chunks
So i am allergic to stevia which means Lilys Chocolate Chips are out of the question and i have an intolerence to Swerve and other sugar alcohols. So i needed to find an alternative to maltitol chocolate chips… so i did.
Keto Chocolate Chunks
You need:
3 oz cocoa butter
2 oz bakers unsweetned chocolate
1/2 cup of allulose
1/2 tsp vanilla extract
2/3 cup unsweet cocoa powder
Pinch of salt
12 drops liquid sweetner
In a double boiler method… melt unsweetned bakers chocolate and cocoa butter together till smooth. Add in Allulose powder and stir till melted. Add in unsweet cocoa powder and stir till combined. Add in liquid sweetner, salt and vanilla extract and stir till combined. Next…using a heat proof blender or an immersion blender…blend mixture till silky smooth(wont be fully smooth due to cocoa powder) Pour mixture into parchment lined 8x8 baking pan and stick in fridge to cool until hardened. Once hardened… remove from pan and chop into chocolate chunks.
