How does probiotic bacteria (of kefir milk) survive in our gut when we follow ketogenic diet, since it require lactose/starch/carbs etc for survival and growth? I have read that, kefir grains die if starved or heated.

Well if you’re eating kefir, I assume you’re eating other dairy, right? That should take care of any problem.

They thrive on lactose but can use other substrates. Most bacteria can use many substrates for energy.
