Just curious - is this recipe really keto friendly?

Hi Ya’ll - I am indexing recipes furiously now for when i get of my EF.

Just curious, is this really keto-friendly being a non green veg?

And if it IS Keto-friendly - is there anything that can be done with carrots?

I understand sweet potato is out of the question, as well as corn. But Carrots is my kiddies fave, would be awesome if i can keep that in our meals.

Carrots & butternut squash are pretty carby for keto but if the kids can eat some carbs then they’re not the worst. Certainly better than pasta or rice.

If it were me I’d maybe use shredded cabbage in that recipe - perhaps add a little shredded carrot for the kids?

I am lucky enough to shop at a great health food store with the best produce section I have seen mostly. I can buy a single carrot which I usually grate about 1” of into a salad because of the vitamins and because I like it. Carrots cooked was always a favorite but I don’t eat them much anymore unless I add a few slices to other veggies for variety. You may have to just cook em up for the kids and have something else for you. I don’t envy people who have to be around temping food because of other family members. For me the kitchen purge enpowered me when I was ready to get the stuff out of my house that I had decided I didn’t want to eat again. And to have to cook those foods everyday will likely be a temptation for you.

I found this very helpful while getting started on keto, you can add about 8 other veggies not listed like Bok Choy but this is a great solid base to work from. There’s lots of cool veg substitution possibilities as well. Like radish for potatoes. Radishes fry up and brown like potatoes and lose most of their characteristic bite when cooked. Daikon works great because of it’s size it’s easy to prep.

Wow awesome - Thank you so much for that reference! I can make the kids carrots easy, they can have all of it - i’ll just make sure i make my cauliflower :wink: LOVE me some cauliflower, always been my favorite, and it will likely never change haha!

Was surprised to see tomatoes on the list, but happy about it! A fave salad of mine is coarsely diced tomato & onion with vinegar, salt & pepper. (Vinegar is ok right?)

Honestly, cant wait to end this fast and try some of these recipes i have found :rofl: Patience grasshopper!

So I’m glad you like the low carb veggies article. Since you found that interesting here’s another link for a pdf from Atkins detailing carb content of many foods. It’s great for having in your phone while grocery shopping if you’re curious about something you want to buy but don’t know if it’s ok on keto. I use this fairly often especially when researching a new recipe or adapting a recipe. It also has a section on low carb selection at chain restaurants if you’re traveling or don’t want to cook.

I’d substitute spaghetti squash for the butternut and use garlic powder sparingly instead of cloves.

Thanks, sure is handy this - and so happy to find my fave snack on this (never even thought to check this). I assume this would be OK to consume? It’s so low in carbs.

And then out of curiosity (sorry i am still very green, this is a huge learning curve). Why is carrots not allowed if its so low in carbs also? I looked up the sugar content - is this completely unacceptable then?

Where do you live Miranda? Just curious because of having no spaghetti squash or even heard of it?

As far as popcorn 5.3 grams of carbs is 1/4 of your daily allowance to get into keto. And it’s a grain which we try to avoid like the plague. And who can eat just one cup of popcorn? I know from experience that I would eat 3-4x that amount. So unless you have been near zero carb all day popcorn may not be your best choice for a snack, :neutral_face:. However if you love it too much to never eat it maybe treat yourself on your birthday or something.

About carrots, I personally consume them in very small quantities like a LITTLE grated into a salad mix (think a couple of baby carrots or an inch of a larger carrot. They have sugars that can add up quick. But I love colorful food and think a bit of beta carotene won’t hurt you if you keep it minimal. I used to buy them in 2# bags but now I just buy a single carrot now and then. I also use them in fermented vegetables that I make but most of the sugars are eaten by the probiotic cultures.

Not keto levels, but whole foods, not processed so okay with lchf. Personally I would sub cubed yellow squash or zuchinni squash for the butternut.

A few roasted carrots have not done me any harm, again they are whole foods not processed. I don’t make them the primary veggie in dishes. Just some for color in cole slaw or salads, usually just shredded or whole ones cooked in stews/soups, but only a couple for a large pot. But everyone reacts to starchy carbs differently.

Darnit, you are right :cry: And no sir, on my birthday, i Am Having Freaking Sushi. This is probably my biggest issue with keto: NO sushi - the first thing i looked up on MFP & Chrono was how damaging this beloved dish of mine is. Sashimi is not my fave which is the only one that’s OK, i love my cucumber rolls & standard maki… but the tempura prawn <3 (Should really stop thinking about food when i feel this fragile).

There is a pretty good keto cauliflour sushi recipe you can make at home.
Dont knock it till ya try it…as a sushi die-hard i did not think it would even come close to tasting good…but it was amazing. I feed it to my friends now.
