When I was brand new on this forum, somebody mentioned a keto dessert with jello. You mixed it with whipped cream? Or was it cream cheese? It had a funny name and everybody said that it was so delicious. I searched for it but cant find it here. Does anybody remember the name and have a recipe for it?

Jello dessert with a name
Search “fluff” and frankenfluff”. Also, Carrie Brown will be releasing a recipe for strawberry mousse that tastes just like that jello fluff soon but it uses real berries and unflavored gelatin. I think it’ll release some time this week or next.
Not the frankenfluff, but I have a quickie no-bake cheesecake type dessert I throw together without measuring anything:
- Several spoonfuls of Mascarpone (or Ricotta) cheese
- Several spoonfuls of extra creamy whipped cream
- EZ-Sweetz, almond extract, vanilla extract, and/or cinnamon to taste
Just mix it all up. Note that some Ricotta cheeses can be a bit “grainy”, so it may not be as creamy as expected. And, beware, some Ricotta cheeses can have a lot of carbs. Mascarpone is best – just so smooth and tasty, but it’s more expensive.
Variations:
- Fold in, or serve with, some fresh or frozen low carb fruit (e.g. sliced strawberries, raspberries, etc.).
- I’ve tried it as a chocolate dessert by adding a tablespoon or two of unsweetened cocoa powder instead of the cinnamon. Yum.
- Although I’ve not tried it, some people have said they use cottage cheese. But I think I would blend it smoother before I tried it.

INGREDIENTS

lemon zest, optional
INSTRUCTIONS
Add the softened cream cheese to a mixing bowl and cream with a hand blender.
Pour in the sugar free lemonade powder and heavy cream and mix until nice an creamy and fluffy.
Spoon or pipe into dishes and refrigerate until ready to eat.
Optional: Use some lemon zest on top for decoration. Or peel thick slices of the lemon peel and cut into flower petals for a decorative flower on top.
Note this recipe makes 4 small but filling servings.

This Frankenfluff was the genius creation of @KetoSnaps.
She melts the sugar free jelly (jello) in half the amount of water, then whisks it into about 250mls plain yogurt and 200 g cream cheese. Whisk it for ages until its all fluffy and set in the fridge.
This is one I made with a punnet of blackberries heated with the jelly crystals and just 100mls water and then whisked in the same!

As @CrackerJax says, it’s just sugar-free jelly granules made up with half the prescribed water, then I whizz in two small pots of yoghurt and a tub of cream cheese until it grows to fill the bowl.
Personally I don’t add fruit as it would send my blood glucose haywire (T1D) but the blackberry version looks incredible!
Am very jealous of those in the US with access to black cherry jello! Over here my favourite jelly flavour is strawberry.
