Karla, make sure any sweetener you use is very low on the glycemic index, and by low I mean like 1 or zero. Some of them are allulose (very expensive), stevia, monk fruit, Erythritol (my fav), and sucralose. Look up a chart for the glycemic index and soon you’ll get the hang of what you can and cannot have. If you see the words Maltitol, dextrose, maltodextrin, sucrose - those are just other names for sugar - AVOID.

+1 on the Erythritol (organic, non-GMO of course) :+1:

Stevia’s fine too if you can handle the aftertaste which I personally don’t, particularly in baked goods.

There are no rules, only guidelines. My keto desert is ice coffee with cream and Stevia. I eat 42 grams net carbs instead of 20 so my daily salad is more palatable and don’t worry about the extra because I burn 1200 calories a day exercising. Some say that artificial sweetners increase the appetite for carbs, may be for some people. In the end I’m looking for a good diet but avoid diet fatigue. So far so good.

I’ve also heard that artificial sweeteners increase your carb craving. How is that even proven? The reason I have thrived on Keto for 9 month without a single day of slipping is because erythritol exists. I love having a little treat with my coffee everyday. I make brownies, blondies, cookies, muffins, and lots of fun treats thanks to almond flour and erythritol. Everyday I say there’s no reason why someone can’t stick to a Keto lifestyle with so many great options.

Literally, I cannot have Truvia. The only thing I can have is Swerve. Any other sugar substitute creates such a massive migraine in me, that the only thing that can cure it is to sleep uninterrupted for 15 hours. And even with the Swerve, sometimes it will give me muscle aches and heart palps. #frigginweird

I like the taste of swerve / erythritol but I’ve found it to be frustrating in the way it dissolves unpredictably. I’ve had poor results with keto fudge due to erythritol-monk fruit granules not dissolving, causing a gritty texture.

Ghee was also problematic since it separated out. The combination led to a couple of ā€œexperimentalā€ batches in the trash. Generic sucralose worked much better.
