I found a recipe that I love and would like to eat everyday but it’s going to involve about 2 tablespoons of unflavored gelatin. Of course I had to find negativity about it. I’m seeing some articles that say it lowers your HDL cholesterol. Any evidence of that? Anything else I need to know about gelatin?

Collagen may be a better fit if you’re looking for a nutritional supplement. In contrast, gelatin is great when preparing desserts and dishes that require a thicker, gelatinous texture.
There were some studies on mice I think that found that to be true. Apparently it is important to not get all your protein from gelatin but to pair it with meat. But I do not think 2 tbs is going to be a problem.

What a relief it’s ok as long as protein and fat is consumed along with it. Considering I just made 60lbs. of Souse, which is Head Cheese flavored with Vinegar. Instead of the traditional crackers, I eat it on my homemade pork rinds made with the piggy’s skin.
I’m from WV. Souse is a staple there. I found a recipe that I love that calls for 4 egg whites and 2T of unflavored gelatin. It’s filling, I like it, and it’s keto according to the nutritional info. Seems like every time I find something I like there’s a caveat.
