Is Japanese Tonkotsu Considered Keto Bone Broth?

Hi folks. I’ve been on Keto for a while, but recently been more seriously about fasting and bone broth. In my research I couldn’t find any answer to my question. Is the Japanese Tonkotsu recipe considered keto “bone broth”? Essentially, it’s a traditional ramen recipe made from pig legs, chicken bones, and some pig fat with some leeks and ginger. I love this recipe, but wanted to double check with the Keto community before I go on my week long bone broth fast. Thanks!

Hi @EinsteinButterbee – I live in Japan, and have wondered the same thing. I think the broth itself is probably keto, but when served in shops here, it is usually full of udon or ramen noodles–so that would make the traditional dish not keto. But if you make your own, sure! You could also try shirataki noodles in place of the usual suspects. Sounds great! itadakimasu…
