I have a question that is pretty much the same as the title. Is cultured milk bad on a ketogenic diet?

If it is fermented, it is probably better than fresh milk in terms of the amount of carbohydrate that is left in the consumed product.

No, cultured milk is not bad on a keto diet as long as your digestion can tolerate it. But do read the label if this is a commercial product. Sugar, fruit and other additives can really drive the carbs up.

If you deal with dairy fine, it’s fine. I drink raw milk and cultured milk is basically the same thing, it’s just done after the fact vs what would’ve normally be in there before they cooked it.

There will be slightly less carbs in it because whatever they added will eat some of the lactose, which helps as well, really not to a point that matters, but it’s something.

How is it cultured? Are you buying it that way?

When I make butter from heavy cream I culture it by adding a couple of Tablespoons of buttermilk and leave it on my kitchen counter overnight. It makes for a more flavorful butter.

I also make my own buttermilk by saving some from the batch before, add it to a quart of whole milk and leave it on the counter overnight.

I do like cultured butter, and don’t understand why this isn’t more popular in the US.

What do you do with buttermilk? Just drink it?

I use it mostly to make my own ranch dressing.
