Now is the time to make it. Right before St Patrick’s Day is when cabbage is usually On Sale. I’ve already made six gallons. I bought mine for $.25 a pound, which is one third the price of the rest of the year.

I DO like sauerkraut! I usually buy prefab though. No sugars added.

When I was a kid, the way home from school went through a busy farmer’s market. Among many other things, there were barrels full of sauerkraut. You could buy it by the pound, or you could buy a big handful on a piece of wax paper and eat it with your hands while walking. We kids did this all the time. It was different from what I can buy or see recipes for - it was really crunchy. I have no idea what the difference in prep was…
