Typically I get knocked out of ketosis from my anaerobic HIT workouts but today I decided to test myself.

If you’re eating low carb, it’s highly unlikely you are kicked out of ketosis by HIIT. You just used up all your ketones for your exercise. If you get anything on blood, you’re in ketosis.
