I have been using a no bake crust, because I wasn’t sure how the almond flour would hold up to toasting over a long period of time…

Also, I have the urine strips and my ketones showed off the charts during the first week. Like the thing turned super purple. I know they are not the best test but they are the cheapest. Now they hardly change at all
i’m kinda lazy when I am not cooking for others… so I use the no seasoning added green giant riced cauliflower… smothered in ghee, garlic, and cheese… and a squirt of MCT… it gives it some moisture with no added flavoring…

The first time I test … with a blood tester… it told me my K reading was 3.8… I freaked out and went to my doctor, who is onboard with doing Ketogenic… and he said not to worry…
Those test are really just touchstones (imo) … if you are eating good, and hitting your macros, then just stay positive and you will get there. The take away from all this (for me) is that I am no longer eating bags of sugar each day, and I am eating WHOLE foods with vitamins and nutrients that I wasn’t getting before!

I definitely feel better. More energy, no food comas after eating. I’m not going to lie, I started this as a way to lose weight for my wedding and now I am finding it just feels better to be off of carbs
Oh… get her some of the Torani SF … I was addicted to coffee with those flavor creamers … like salted caramel… hubby brought home the torani as a joke when I asked him to get me some of my regular creamer… I haven’t bought another “fake food” creamer since… HWC and a splash of the torani’s is about the same taste to me
Honestly, she is very picky, and with her medical issues, she’s been staying away from certain foods as well. At least those that would interact with meds. But she is trying, so we are working on it. … About to create some type of fat-bombs, probably peanut-butter/chocolate based. I think this will help her, she just needs to get enough to help keep her satiated.
As for the recipe, sure, I will shoot you a PM tomorrow. Getting ready to hop off here. But just let me know what you’re looking for. I don’t have any of the written down. A trait I think I got from my Mom. But if it’s cheesecake recipe you are looking for, I have quite a few to choose from. … But haven’t re-created them Keto Friendly just yet. But it shouldn’t take me too long to do so.

After so many years of carb chugging, it can feel strange to suddenly feel so much better … and not even crave the foods we wanted before! I haven’t had this much energy since I was in high school! And the “waves” of depression I considered “normal” have subsided since I started cutting out the carbs, processed foods.
I will say this … I, as a woman, do not stress about veggies/fruits and their carb count. But, I am not focused on losing weight so much as on the improved mental health/clarity aspect. I don’t indulge in overly carby fruits, but I don’t stress about having some either. If I want a carrot or an apple, then I have one. I don’t subscribe to the “all carbs are bad” sort of dogma that many do … not all carbs are equal in my books. The carbs of an apple or grapes is not the same as the carbs from Twinkies … lol … I just limit my consumption and try to adjust my daily count to accommodate “this for that”.

Without knowing your height and weight it is hard to be sure, but your carbs and protein look pretty high.
It is normally 20g carbs, protein that you need (1g per kg lean body mass or a similar measure) and fat to satiety.
I’m a woman who is about 210lbs (was 238lbs) and 6ft 1 so my protein level is about 80g or so. But I don’t obsess about whether I meet it or go over a bit on any given day. My fat usually ends up around 150g or so. Fat isn’t a target, you should just listen to your body and eat enough to go a few hours to the next meal without snacking.
Looking at your meals, personally I find chicken is high in protein compared to other meats, so I tend to go for fatty cuts of pork, lamb, minced beef etc where I get more tasty fat in with the meat. This keeps the protein down and the fat levels up.
Start with one teaspoon and slowly build your MCT oil until reaching a tablespoon. I add 1tbs now to my first black coffee, favourite hit of the day
I am 237lbs (started at 246) and 5’6. I do eat a lot of chicken so I will try swapping that out for fattier meats. Thanks for the tip!

As long as you are eating until you are satisfied. The reason is that the body will hang on to any excess fat until it is satisfied that there is no famine going on. Then it will regulate your appetite so that it can burn the fat you eat and your excess stored fat. The reason we say to fill up on fat is not that fat is magic, but that it stimulates insulin secretion hardly at all, and we want to keep insulin low so we can burn fat.
