I give up on making keto cheesecake

Today I met the perfect cheesecake and fell asleep while it was in the oven and it burned. This is the first time an actually look pretty and I was about to take it out I came upstairs sat down on my bed and dozed off. I cut the stove off and have it open and the damn thing burned. I’m tired of trying to make a keto dessert so I’m just going to go and buy me an Atkins bar because I feel a craving coming on and I don’t want to screw up by depriving myself

Hi, Karla! Are you open to some kind of sweet that isn’t cheesecake? If so, these are pretty easy to make and very good. You can mix them up in a minute or two. The recipe calls for rolling them into little balls, but I’ve also just spread the mix out in a little Tupperware-type bowl and then cut it like fudge, when pressed for time. Sweeteners aren’t really agreeing with me these days, so I haven’t had these in a while, but I like them a lot. I’ve used just plain erythritol instead of Swerve, and i think just about any sweetener would work.

ETA: If you use plain erythritol, you’ll need a little more than the Swerve this recipe calls for. I think I increased it to 3T when using plain erythritol.

RIP keto cheesecake.

Maybe you can become an expert at mug cakes and fat bombs, or grasshoppers and keto angel food cake in the meantime? The Food Network’s keto chef George Stella’s cookbook “Quick & Easy Low Carb Cookbook” has some amaing dessert recipes, as well as Martina Slajerova’s “The Keto Diet Cookbook”.

An Atkins bar once and a while won’t derail you - there are some healthier bars out there though, with no chemicals and only real food ingredients etc. Occasionally I enjoy Julian Bakery’s Paleo Thin Choc Almond bar and their Vanilla bar - both w/ 20g grassfed beef protein somehow hidden in them! But my fave dessert is wild blueberries w/ heavy cream or homemade keto ice cream…

Yes I’ll try anything I have a sweet tooth. I planned on buying an Atkins bar but I just couldn’t buy it because it read like a book. I tried though

I swear I wanted to buy an Atkins bar so bad and I even picked it up but it reads like a book and I didn’t want to go out of ketosis by fooling around with an Atkins bar. But I remember this is how I accidentally got off of Keto because I felt deprived and I end up buying a Snickers bar and totally screwing up and just felt like oh well. I don’t want to do that this time. I definitely want to avoid that. I was off kylo for 3 months

No nothing added. No sweetener just natural!
They say you can get the unsweetened syrup. But I dont do well with artificial sweeteners.

If you want a quick portion of ice cream, this is my fave. You can eat it right away, it doesn’t need freezing first.

@Karla_Sykes I keep my keto desserts really simple.

I make 2 kinds of keto cheesecake ‘mousse’ - one is dark chocolate, double cream, an egg, cream cheese and Splenda, and the other is lime or lemon, double cream, cream cheese and Splenda.

Thick, rich and delicious. I make 6 portions at a time so that’s 3 days’ dessert for two of us each time.

Chocolate cheesecake mousse
Melt 100g 90% chocolate with 175ml double cream and sweetener to taste. I also put in some orange extract. Using an electric whisk, whisk in an egg, add two tubs of cream cheese and whisk until thick. Divide into dishes and chill.

Lime or lemon cheesecake mousse
Whip 300ml double cream with 4dsp Splenda. Add two tubs of cream cheese and whisk. Add the zest and juice of a lime or lemon.

I vary either of the above with coconut cream or strained yoghurt, depending on whether I’ve got access to double cream or not. It’s fun and delicious to experiment!

I started my keto life with Atkins, but not using the bars. They made me crave more of the same.

There are plenty of good keto desserts out there. Try Tiffany Elrod’s dark chocolate espresso tortes they are awesome.

You were “cooking” cheesecake ? I have just taken some cream cheese, a little bit of heavy cream, a few drops of sucralose, a shot of real vanilla extract… and then either some lemon juice, or maple extract… mix it up real well… and eat it ! Bam :slight_smile: super tasty. Super easy :slight_smile:

I just grab a big spoon (not a ladle or serving spoon, just the bigger version of two normal spoons) and scoop some cream cheese into a condiment cup, sprinkle with lemon powder and dash of sweetener, smoosh it around and eat it that way. If I’m having a cheesecake craving emergency, I just grab a spoonful and do the lemon and sweetener sprinkle on top.

Plus it keeps me from making a whole cheesecake. Dangerous.
