I am so happy I finally mastered the perfect keto sweet potato pie with coconut flour crust. I myself do not like almond flour pie crust I prefer coconut flour because to me it tastes a lot like regular flour if that makes sense

Forgive me if this is a silly question, but are you actually using sweet potatoes in your pie? I thought they weren’t keto because of the carb count? I’m only 4 months in to keto, so I’m still learning… but I really miss my sweet potatoes! Lol

Oh my, you could make a nice side income stream selling to Keto-LC desperados. 5 pies a week at $30-50/each including the Fedex shipping. I’d buy one, or three!!!

I’m really glad you had it in you to master that pie in these surreal times! Makes me very happy just to know it.

It is true as with anything it is really about amount and awareness of concentration of calories and carbohydrates which you can still make it keto friendly (just don’t eat as much or modify it)!

I eat sweet potatoes raw (cut them into sticks and put them in a glass of water in the fridge to munch on occasionally) for their high resistant starch properties that feed the butyrate making bacteria.

Besides unripe bananas I think they are the best source of resistant starch.

Even cooked sweet potatoes can be a resistant starch or sugar to digestion.

You could even dilute the sweet potatoes (sweet potato pie) and cut with something else nutritious, tasteless and carb free so it would even feel more filling and satiating in water density.

You can even hollow out potato skins or halves (something like this below; barely any carbs) and it would still be keto friendly.

This tiny sweet potato pie this tiny sweet potato pie have half of a yam with the filling and the rest is keto friendly ingredients for example erythritol, almond milk, vanilla extract, cinnamon, and Nutmeg. And the crust is made 100% of coconut flour, olive oil, 2 eggs. And this is my sweet potato pie that is keto friendly. And if you notice the portion size is small and what I do and even with the small size pie I eat 1/2 of one this week in the next half the other week and I’m very strict. This is one of my treats that I treat myself to it’s not something I do every week. So I think with heavy modification and Portion Control I think it’s possible on a keto diet but again you need to heavily modify the ingredients
